This week’s Cookery Corner Recipe is mini savoury muffins compliments of Chef Sham Hanifa of The Cottage Restaurant, Jamestown, Carrick on Shannon. Chef Sham talked us through how to create it.

Mini Savoury muffins
Makes 6
Ingredients

6 eggs
100ml milk/cream
Salt & pepper to season

100g diced Chorizo
Half red pepper diced
50g spinach

6 Cherry tomatoes
1 potato peeled & grated.
Method

- Crack the 6 eggs in a bowl and add the milk or cream. Whisk together.
- Add salt & pepper
- Add in the chorizo, peppers, spinach, cherry tomatoes & grated potato.
- Grease a muffin tin with butter & divide the mixture evenly between the 6 muffin holes filling 3/4 full.
- Bake in a preheated oven 170•c for 20-25 mins.
- Leave to cool for 5 mins then remove from the tin & enjoy.
- For vegetarians leave out the chorizo & add any cheese of your choice.
