Chef Sham spoke to Joe Finnegan on the JF Show about his recipe for Crispy Chicken Noodle
Ingredients:
1 Chicken breast/ boneless thighs
1 tablespoon sesame oil
1 cup chef sham one for all sauce
180 gm soaked egg noodle
1 cup of water
1 finely sliced shallot
1 pak choy
1 red peppers (sliced)
Handful beansprout
1spring onions (chopped )
1 cup corn flour
1 egg
1 cup vegetable oil (for frying)
Method:
• Prepare the chicken: cut the chicken into small cubes and place in a large bowl. Add the egg, one for all sauce then stir and make sure chicken is well coated.
• Add the corn flour into the chicken bowl and mix well.
• Heat enough oil to fry the chicken in deep saucepan until cook, golden colour and crispy.
• Set the crispy chicken aside.
• Heat a wok over medium heat to high, add in sesame oil.
• Add in garlic, onion and peppers fry for 1 min.
• Add in 1 cup of chef sham one for all sauce, mix all well then add in 1 cup of water and bring it to boil for 30 second.
• Add in the egg noodle and mixed all well make sure noodle is well coated
• Add in the crispy chicken and all remaining vegetable and mixed all well together and ready to serve.
