The Regional Final of The Young Cook of the Year competition will take place at Cavan Institute tomorrow, Wednesday. Schools from Cavan, Monaghan, Meath and Louth have participated in the programme, and the event is a follow on from the local finals held in January.
Pauric White is the Instructor on the Commis Chef Apprenticeship in Cavan Institute and he says the programme has gathered momentum over the last couple of years. Speaking to Northern Sound, Padraic highlighted the connection between the event and the high standard of food that is produced locally.
He added how awareness is key to promoting the food and nurturing the talent in the region's chefs of the future. "It really is building blocks and it's about them having confidence to be out in industry, and having the confidence to stand up among their peers and create two beautiful dishes, present it, and have the confidence to talk about it.
"You just want to see them after they have presented their dishes; there is a weight of their shoulders; they are a little bit more relaxed but the smile on their faces and the confidence they have after completing their task really is a wonderful thing to be able to experience," said Padraic.
