A union representing meat factory workers claims up to 40 employees are sharing accommodation in the midlands.
SIPTU will address the Oireachtas Covid committee this morning, with representatives from Meat Industry Ireland and the Health and Safety Authority also due to attend.
Health Minister, Stephen Donnelly, will not be in attendance at today's committee.
Local TD Matt Carthy says that decision will cause "disbelief" in some quarters, adding the Minister for Health "has an obligation to be publicly accountable".
The special hearing is taking place after a recent spike in cases following outbreaks in processing plants.
