A County Cavan based couple who never touched a sheep or a hen before have set up a successful farm holding near Bailieboro .
In 2021, Derek Lynch and Jane Carolan set up Forest Hill Farm, and two years on their pasture-raised eggs, lamb and pork as well as their homemade bread and jam are selling out every day.
Jane is an occupational therapist while Derek works in the Department of Finance.
Speaking on the Joe Finnegan Show earlier, Derek said the couple had been toying with the idea of producing their own food for years and in 2021, wanting an escape from their day jobs, they decided to give it a go and they set up the 4 acre farm.
Derek a Meath native and Jane from County Cavan still carry on their day jobs at present alongside running the farm, but Derek hopes that one day they can turn to farming on a full time basis.
The first thing they when starting out was planting hundreds of trees and with almost 400 laying hens, their honesty box at the farm entrance is very popular in the wider area.
Mr Lynch says the idea of the farm was in the pipeline for a number of years before it became a reality.
