The pandemic has given chefs time to redesign and train according to a local chef.
The executive chef at the Castle Leslie Estate, Aaron Duffy, says that while it has been a challenging and difficult time for them and the entire industry there have been some positives.
He says that his team of 25 have continued to upskill and train from home, developing new recipes, and sending cooking demos in order to maintain their professional engagement.
However, he says that their loyal customers have been 'left in the dark' and they are working to ensure that they can have the best experience when they do get to return to the estate in the coming months:
