The owner of a Cavan gastro-pub that's had to close two days a week due to staffing issues, says it's "virtually impossible" to employ head chefs post-pandemic.
But while Fergus Murphy, of Murph's Gastro Pub in Butlersbridge, acknowledges the financial impact of closing two days a week, he says it's created a better work/life balance for staff.
And while Fergus says it was always difficult to recruit head chefs, he's warned the staff "just aren't there" now.
Murph's Gastro Pub is closed on Mondays and Tuesdays as a result and Fergus says many in the hospitality sector are hiring staff with no training "because there is no one out there".
