This week on the Afternoon Show for Active Living James King decided to push his cooking boundaries as he tried to make one his favorite dishes chicken parmigiana. Have a listen to how he got on and how you can make it at home and here’s the recipe –
Recipe:
½ cup all-purpose flour
2 eggs
1 ½ cup breadcrumbs
4 chicken breast fillet
½ cup vegetable oil
1 cup marinara sauce
2 tomatoes (sliced )
1 cup mozzarella cheese, grated
4 medium-sized potatoes, cut into cubes
parmesan cheese
Method:
Put the flour, eggs, and breadcrumbs in three separate bowls. Lightly coat the chicken in flour and shake off the excess. Dip it into the eggs and then to the breadcrumbs. place the breaded chicken breasts onto a plate or tray and place in the fridge for 15 minutes.
Remove chicken from the fridge and cook on a pan medium to high heat either side for 3 or 4 minutes until golden brown and cooked through
